Oven Chicken Thighs and Dill Couscous

Ingredients for the recipe:

  • 8 boneless and skinless chicken thighs trimmed
  • 1 tsp butter
  • 1 and 1/4 Art. couscous
  • 1 tbsp. dill chopped
  • 1 tbsp. grape tomatoes, each half pierced a small knife
  • Zest of 2 lemons + juice of 3 lemons + 1 medium lemon, sliced into 4 parts
  • 2 tbsp. l olive oil
  • 0.5 tsp dried oregano
  • 2 medium cucumbers, cut into 4 parts and chopped into pieces 1 cm.
  • 0.5 tbsp. Greek yogurt with a fat content of 2%

Recipe preparation:

  1. Install the oven grill about 10 cm from the heating element and preheat the oven in grill mode.
  2. In a medium-sized saucepan, mix 1.5 tbsp. water olive oil and 0.5 tsp salt and over moderate heat bring to boiling. Remove from the stove, quickly stir in the couscous and leave under cover for 5 minutes. Loosen the couscous with a fork, stir in the dill and cover with a lid.
  3. Meanwhile, on a baking sheet with the sides, mix the chicken, tomatoes, lemon zest and juice, olive oil, 1 tsp. salt, oregano and 0.5 tsp pepper. Stir the chicken thighs so that they are completely covered with marinade, and lay them as flat as possible. Fry in the oven until tender and browned, 10-12 minutes, turning the tomatoes and chicken and turning the baking sheet the other side in middle of frying.
  4. Arrange two pieces of chicken on plates. Stir in all the juices from baking pan in ready-made couscous. Put 1 and 1/4 on each plate Art. couscous, add cucumbers on top, a spoonful of yogurt and a slice lemon.
