  1. We wash the big pork knuckle, put it in a pan, add peeled onions, ground pepper, salt (2 tbsp), pour water and cook over low heat after boiling for 1 hour. Periodically remove the foam.

  2. We take out the boiled knuckle from the broth, carefully pierce it with a knife meat and insert the garlic cloves cut into 4 parts. Put the prepared shank on a baking sheet, pour in the oil (3-4 tablespoon), 1 bottle of beer, on the knuckle we place sprigs of rosemary and send to the preheated oven at 180 degrees for 3 hours.

  3. Periodically we take out a wheel, we turn over, we pour in still beer, remove dried rosemary and add new leaves. Leather shanks on all sides should be covered with a brown crust.
