- Grind cookies into crumbs using a blender or rolling pin.
- Melt butter, add to cookie crumbs. Good mix, put in a mold (I have a diameter of 20 cm), distribute on the bottom and sides, 3 cm high. Put in preheated to 180 degrees oven for 10 minutes. After 10 minutes, remove and reduce oven to 120 degrees.
- Combine the cream with the eggs, mix well. In another bowl combine 100 grams of sugar, 30 grams of starch and curd cheese, well mix with a mixer, then gradually add the cream with the egg, mix well.
- Pour into the base from the cookies and put in the oven for 70 minutes at a temperature of 120 degrees.
- We push a little raspberries, add sugar to it (to taste), well mix.
- We take about 100 ml of water and put 5 g of agar-agar on fire, stir well. Pour raspberries with this mixture.
- Pour the berry mixture on top of the cheesecake and level it.
- Let cool the cheesecake, then cover with a film the shape, make in small holes and put it in the refrigerator for 4-5 hours before complete solidification.
