- 900 gr. mussels in the leaves, wash, cut the “beards”
- 1/4 Art. olive oil
- 0.5 tbsp. finely chopped shallots
- 5 tbsp. l thinly chopped garlic
- 1 tbsp. white wine
- 0.5 tbsp. sour cream 15 – 30% fat
- 1/3 Art. chopped parsley
- 2 tbsp. l (30 gr.) Butter
- 2 tbsp. l chopped chives
- 2 tbsp. l mustard
- French fries for serving

Recipe preparation:
- In a large cast iron or stewpan with a diameter of 30 cm. On moderate heat olive oil over a fire. Sprinkle shallots and garlic and fry for 2 minutes until soft. Pour in white wine and bring to a boil. Salt and pepper to taste. Add the mussels cover and cook for 3 minutes until the leaves are open up. Use a slotted spoon to put the mussels on a large dish.
- In the remaining liquid, put sour cream, parsley, cream butter, chives and mustard. Stir everything and bring to a boil. Pour the mussels with the resulting sauce and serve them with potatoes fries.
