Ingredients for the recipe:
- Bouillon – 1 liter
- Ham – 200 g
- Zucchini – 200 g
- Tomatoes in a / s – 200 g
- Parmesan Cheese – 100 g
- Potato – 4 pcs.
- Bulgarian pepper – 1 pc.
- Carrots – 1 pc.
- Onion – 1 pc.
- Tomato paste – 2 tbsp. l
- Vegetable oil – 2 tbsp. l
- Garlic – 2 cloves
- Hot pepper – 1 cm pod without seeds
- Salt, black pepper – to taste
- Dill and parsley – optional

Recipe preparation:
- Cut ham and carrots into 1 cm cubes, onions and hot chop the pepper. In a frying pan in vegetable oil, lightly saute the ham, add the onion and sauté for a couple of minutes. Add carrots and hot peppers, pour a glass of broth and simmer on a weak fire 10 minutes.
- Add tomato paste to the tomatoes for a brighter color and grind in a blender. Add to vegetables and simmer another 5 minutes.
- Dice potatoes, paprika and zucchini 1 cm in size. Transfer all vegetables from the pan to the pan, add potatoes, bell pepper, zucchini and add broth, and then water to the level of 4 liters. Do not overdo it with liquid – soup should be very thick. Let the soup boil, salt pepper, turn down the heat and let the soup sweat for 20 minutes.
- Put finely chopped greens, garlic in the soup, then another 5 minutes and turn off the fire. Let the soup brew for 10-15 minutes. At Serve sprinkled minestrone with grated cheese.
