Salsa verde
- A bunch of parsley, cut large stems
- 1/4 Art. seedless green olives
- 4 cocktail bulbs, without liquid
- 1.5 tsp pickled capers, without liquid
- 3 gherkins, dry
- 1 anchovy fillet, rinse
- 2 tbsp. l olive oil
- 1 tbsp. l mayonnaise
- 0.5 tsp Dijon mustard

Recipe preparation:
- Make salsa verde: put parsley in a blender, olives, cocktail onions, capers, gherkins and anchovies. Add olive oil, mayonnaise, mustard and pour some water; grind to a uniform consistency (do not mix for too long, otherwise parsley will turn brown).
- Cook the chicken breaded: cut the chicken breast on the side into three parts to get 3 equally thin cutlets. Fold the pieces in a pile and cut them in half so that it turned out 6 pieces. Salt and pepper. In a shallow bowl, lightly beat eggs, salt and pepper. Pour flour into another shallow bowl, salt and pepper. Mix in the third shallow bowl panko, parmesan, pecorino, oregano, sage, thyme, flakes of red pepper and 1/4 tsp salt. Roll seasoned chicken in flour, then dip in the egg mixture and roll in a mixture of breadcrumbs, pressing firmly so that they stuck to the meat.
