Mashed potatoes for a festive table

Recipe preparation:

  1. Put potatoes in a large pot, add bay leaf, 2 Art. l salt and fill with cold water. Bring to a boil on moderately high heat and simmer until soft, about 20 minutes. Good strain and discard the bay leaf.
  2. Meanwhile, in a small saucepan, heat the cream and butter. Pass the potatoes into a bowl through a press or wiping sieve. Add hot cream, salt and pepper. Stir with a spoon and add the chives.
