Light salad with apples and corn

Mix the slices of Belgian chicory, apples, corn, cheese, add avocados with a winter touch like dried cranberries and pour a refreshing dressing of lemon juice and olive oil. Ingredients for the recipe:

  • 5 medium heads of Belgian chicory, trim the ends, cut heads in circles 2.5 cm thick.
  • Juice 2 lemons + half a lemon
  • 1 tsp sea salt
  • 0.5 tsp ground black pepper
  • 1/4 Art. and 2 tbsp. l olive oil
  • 1 medium green apple peeled and peeled, diced into 2.5 cm cubes.
  • 110 gr. gruyere, cut the crust, cut the cheese into cubes of 2.5 cm.
  • Half an avocado cut into cubes of 2.5 cm.
  • 2 tbsp. l dried cranberries or seeds 1 medium pomegranate
  • 2/3 Art. corn kernels cut from the cob

Recipe preparation:

  1. In a small bowl, mix lemon juice, salt, pepper and olive oil.
  2. Put the chicory and apples in a large serving bowl. Squeeze the juice of half a lemon on top and mix to coat chicory and apples juice, and they did not darken. Add cheese and avocado, and then add cranberries and corn.
  3. Just before serving, pour salad dressing and mix.
