Recipe preparation:
- Sprinkle a metal mold on 12 muffins with a cooking spray. In a mixer bowl with a spatula nozzle, mix milk, sugar, yeast, flour, egg yolks and salt. Knead at low speed for 1 minutes. Replace the blade with the dough hook and give the dough rest 10 to 15 minutes.
- Add 60 gr. butter and stir at low speed. Increase the speed to medium and knead the dough until it is move away from the walls of the bowl, and will not extend into thin translucent sheet, about 8 minutes.
- Put the dough on a lightly dusted work surface, roll and form a big ball with your hands. Return the dough to a bowl, cover with plastic wrap and place in a warm, dry place, so that it doubles in volume, for about 1 hour.
- Put the dough out of a bowl and roll it into a 30×30 square cm, about 1 cm thick. Melt the remaining butter and grease the surface of the dough.
