Lamb skewers with sauce zaziki

Indonesian Sauté, French Brooch or Turkish Kebab – Dishes skewers always give pleasure. “Kufta” is a kebab of minced meat, not diced meat. Difficulty: easy Servings: 4 – 6 Recipes used volumetric containers: 1 cup (tbsp.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

Kufta:

  • 450 gr minced beef neck or young lamb
  • 4 cloves of garlic
  • 1 tbsp. l coarse salt plus a pinch
  • 3 tbsp. l grated onions
  • 3 tbsp. l chopped fresh parsley
  • 1 tbsp. l ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp cayenne pepper
  • 1/4 ground ginger
  • Ground black pepper
  • Grill Olive Oil
  • Zaziki sauce (see recipe below)
  • Grilled Pita Cakes

Zaziki sauce:

  • 2 tbsp. natural yogurt made from whole milk or 1 tbsp. natural oriental yogurt
  • 1 peeled and peeled seeds, cut in half a cucumber medium size
  • 2 tsp coarse salt plus a pinch
  • 1/2 clove of garlic
  • 1 tbsp. l olive oil
  • 1 tsp lemon juice
  • 1/2 tsp dried mint (break into small pieces)

Recipe preparation:

  1. Crush the garlic cloves, sprinkle them with a large pinch of salt and with the flat side of a large knife, mash the mixture into a paste with slices. Stir the pasta and the remaining tablespoon of salt with meat, onions, parsley and spices.
  2. Cover the mold with aluminum foil. Divide the meat mixture into 28 pieces. Stick every piece around the sharp end of the skewer (if you use wooden, soak them in water for 15 min. before stringing) to make an oval kebab 5 cm long., which is located on the skewer so that it barely covers it tip. Put the skewers in a mold, cover and refrigerate not less than 30 minutes and up to 12 hours
  3. Preheat the grill pan over medium heat or cook grill. Lightly grease the pan with olive oil. Fry in batches kuftu until ready, periodically turning over until the meat is browned on all sides, about 6 minutes. Shift to serving dish and serve with zaziki sauce and scones.

    Zaziki sauce Yogurt sauce (Greek sauce with yogurt and cucumbers)

    If you are using whole milk yogurt, put in fine mesh coffee filter, put yogurt there, set the sieve in a bowl and refrigerate for 12 hours. Pour out liquid and transfer the yogurt to a bowl.

  4. Grate the cucumber with large holes in another bowl. Sprinkle it with 2 tsp. salt and mash the cucumber with your hands. Leave on 20 min., then squeeze out the cucumbers to get as much as possible liquid. Crush the garlic, sprinkle it with a large pinch of salt and mash the flat side of a large knife into a paste with slices. Add cucumber, garlic, olive oil, lemon juice and peppermint. Before serving, refrigerate at least Hours. Exit: 1 1/4 Art.
