Beef Kharcho Soup

To make kharcho soup we need:

  • beef fillet or brisket on the bone 07, kg
  • rice 0.2 kg
  • peeled walnuts 100 gr
  • tkemali sauce or satsebeli 150 ml
  • garlic 3-5 cloves
  • seasoning hops suneli 2 teaspoons
  • red ground sweet pepper 2 teaspoons
  • cilantro bunch 50 gr
  • peppercorns
  • ground black pepper to taste
  • salt to taste

You can make kharcho soup like this:

We thoroughly wash the beef fillet or brisket on the bone, cut into small pieces and put in a pan, pour 3 liters of water, cook over medium heat for 1.5-2 hours, removing constantly scale.

Pour well-washed rice and cook 10 minutes after boiling.

Fry chopped onion in vegetable oil. Greek chop the nuts with a knife, rinse and dry the cilantro, chop the garlic finely or skip through the press.

Dip the prepared ingredients in a pan and cook another 7-10 minutes. Next, the soup should be salt, fall asleep all prepared seasonings, pour in tkemali sauce or satchebeli.

Kharcho soup with tkemali sauce will turn out less spicy and sour, but satsebeli sauce will give kharcho soup special spice, burning pungency and burgundy color, which is characteristic precisely traditional kharcho soup.

Keep on fire for another 5 minutes, cover with a lid and remove from the stove. Give kharcho soup a rest for 10-15 minutes, after which serve to the table with finely chopped herbs on a separate plate and pita bread.
