Ingredients for the recipe:

Dry seasoning “Jerk” for pork:

  • 1 tsp dry mustard
  • 1 tsp dried onion

  • 1/2 tsp ground allspice
  • 1/2 tsp dried thyme
  • 1 tsp seasoning salts
  • 1 tsp kajun seasoning (see recipe for this spice mix)
  • 1/2 tsp turmeric
  • 1 tsp ground black pepper

Barbecue Sauce “Jerk”:

  • 1/2 tbsp. pineapple pulp
  • 1/2 tbsp. brown sugar
  • 3 tbsp. l soy sauce
  • 3 tbsp. l red wine vinegar
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tsp chipotle pepper powder
  • 1/4 tsp thyme

Recipe preparation:
