Recipe preparation:

  1. Put mango, jalapeno, mayonnaise, zest and juice in a blender lime, cilantro and a pinch of salt. Beat until smooth. Transfer to a small bowl and add salt if necessary. Cover with cling film and refrigerate until use.
  2. Fill half the oil in a fryer and heat it to 180 ° C. While the oil is heating, cut the sausage into 3 equal parts, each approximately 15 cm long. Cut each piece in half lengthwise. Cut the sharp end of each skewer with kitchen scissors. Neatly insert 1 skewer a little more than until the middle of each piece sausages.
