- 1 and 1/4 tsp freshly ground black pepper, portioned
- 1/4 Art. olive oil
- 1 diced celery stalk
- 1 diced carrot
- 4 chopped garlic cloves
- 1 medium chopped onion head the size
- 3 sprigs of fresh thyme
- 1 bay leaf
- 1/4 Art. chopped fresh parsley leaves

Recipe preparation:
- In a shallow bowl, mix the flour, 1 tsp. salt and 1/2 tsp pepper. Wash the chicken and pat dry with paper towels. Slightly roll the chicken in the flour mixture, a few pieces at a time, flicking the excess.
- In a large skillet over medium heat, heat oil. Put chicken in the pan. Fry for 4-5 minutes. from each side. Put on a plate. Repeat the same with the remaining chicken.
- Put the onions in the pan and fry for 2 minutes. Add carrots, celery, garlic, thyme and bay leaf. Sauté for 10 minutes. Knead the tomatoes and add them to vegetables. Pour red wine, add the remaining salt and pepper and bring to a boil. Lay the chicken, reduce the heat and cover pan cover. Simmer for 45 minutes., Periodically turning pieces of chicken. Remove and discard the bay leaf. Add parsley and serve in serving plates.
