- When the sugar has completely dissolved, pour in the soda and start to interfere intensively. The mass will begin to foam and grow. Gray about minutes. Remove from heat.
- We introduce the yolks, immediately actively interfere, so that they do not curl. Leave the mixture to cool for 5 minutes.
- Pour the sifted flour. Start at 450 g. Add when hanging as needed. The dough should not stick to hands.
- Divide the dough, I have 10 cake layers for a cake with a diameter of 18 cm.
- Each cake individually roll out on parchment as much as possible thinly (literally 1-2 mm). Cut a circle (I made it a ring) prick with a fork.
- We send to the oven preheated to 170С for exactly 6 minutes. So separately bake all the cakes. We get out, cool.
- With the tip of a sharp knife, we pass along the boundary of the circle, the edges fly off almost ourselves due to the fact that we outlined and cut circles to baking.
- We don’t throw out the remaining edges, I put them in a blender and pray, it will be dusting.
- We make a cream: beat sour cream, cream and sugar with a mixer in steady mass.
- We collect the cake: for each cake I put 1.5-2 tablespoons of cream. Coat and smooth the cake with cream. Sprinkle on all sides. We clean in the refrigerator for at least 5 hours (preferably at night).
