Ingredients for the recipe:

  • 1 chicken (weight about 1.5 kg.)
  • 550 gr raw chicken sausage
  • 450 gr smoked pork sausage, thinly sliced
  • 350 gr skinless chicken breasts, boneless pieces
  • 550 gr smoked turkey, skin and bone removed, cut into pieces
  • 2 tbsp. plus 2 tbsp. l vegetable oil
  • 2 tbsp. wheat flour
  • 1 large onion, chopped
  • 2 large green bell peppers, sliced
  • 2 tsp red pepper flakes
  • 1 bunch chopped green onions
  • 1/4 Art. kajun seasoning
  • Cooked White Rice for Serving

Recipe preparation:

  1. Frying flour: heat 2 tbsp. vegetable oil in a large cauldron over medium high heat, about 5 minutes. Reduce heat to medium, then add flour in 2 sets, mix, until the mixture is similar in consistency to the cake dough. Continue cooking, stirring constantly, until the mixture becomes dark brown, about 20 minutes Remove from heat, then mix with half onion and pepper.
  2. In a large pan, place the chicken, 10 tbsp. water flakes red pepper, 1 tbsp. l salt and 1 tsp. pepper. Bring to a boil and cook for 1 hour. Strain the broth, then return it to the pan. Remove the skin and bones from the chicken, then cut the meat into pieces medium size. Heat the remaining 2 tbsp. l vegetable oil in medium pan over medium heat. Add chicken sausage and fry, turning, until cooked for 6-8 minutes. Give some cool, then cut into slices.
  3. Add 16 tbsp. water into a pot with broth and bring to boiling. Add flour base; cook on moderately high heat, stirring until it disperses for about 5 minutes. Add the remaining onions and green peppers. Bring to a boil, then reduce heat to medium, cover and cook for 1 hour. Add pork sausage and raw chicken breasts, reduce heat to low and cook under cover for another 30 minutes. Add smoked turkey, chopped chicken sausage, cooked pieces of chicken and leek and stew for 30 minutes. Remove the grease from the surface, then add the kajun seasoning. Serve gumbo on rice.
