Ingredients for the recipe:

Gumbo

  • 900 gr. boneless chicken, skinless, sliced in large pieces
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 2 chili peppers, chopped
  • 2 stalks of celery, chopped
  • 4 cloves of garlic, chopped
  • 1/2 tbsp. wheat flour plus more
  • 2 tbsp. l plus 1/2 tbsp. vegetable oil
  • 450 gr smoked sausage
  • 450 gr diced tomatoes
  • 330 ml. beer
  • 6 tbsp. chicken broth
  • 350 gr crab meat or peeled shrimp
  • 1 bunch chopped green onions
  • 1 tsp hot sauce

Gambo seasoning

  • 1 tbsp. l smoked sweet paprika
  • 1.5 tsp coriander
  • 1.5 tsp ground cumin
  • 1.5 tsp cayenne pepper
  • Leaves of several sprigs of fresh thyme
  • 2 fresh bay leaves

Recipe preparation:

  1. In a bowl, mix paprika, coriander, cumin, cayenne pepper, thyme and bay leaf. Grind and set aside the mixture onions, peppers, celery and garlic.
  2. Heat a thick-bottomed pan over medium-high heat. Sprinkle chicken with salt and pepper and roll in flour. Add about 2 tbsp. l oil, and when heated, add pieces of chicken, fry, turning from time to time. When toasted, lay out chicken on the dish. Fry the sausage in oil and put on a dish. Pour fat, then add the remaining 1/2 tbsp. oil and 1/2 tbsp. flour, fry, constantly mixing, until the color becomes golden brown.
  3. Add vegetables, seasoning, salt and pepper to the pan, and fry 6-8 min. to slightly soften the vegetables. Add tomatoes and beer and brew beer in half, 2 min. Add the broth, chicken and sausage back into the pan, warm, then completely refrigerate and store in Refrigerate for future use. When serving, warm up the gumbo: place gumbo saucepan over medium heat, add crab or shrimp meat and heat until the shrimp is ready. Garnish with onions and serve with rice.
