Ingredients for the recipe:
Gumbo
- 900 gr. boneless chicken, skinless, sliced in large pieces
- 1 large onion, chopped
- 1 large green bell pepper, chopped
- 2 chili peppers, chopped
- 2 stalks of celery, chopped
- 4 cloves of garlic, chopped
- 1/2 tbsp. wheat flour plus more
- 2 tbsp. l plus 1/2 tbsp. vegetable oil
- 450 gr smoked sausage
- 450 gr diced tomatoes
- 330 ml. beer
- 6 tbsp. chicken broth
- 350 gr crab meat or peeled shrimp
- 1 bunch chopped green onions
- 1 tsp hot sauce
Gambo seasoning
- 1 tbsp. l smoked sweet paprika
- 1.5 tsp coriander
- 1.5 tsp ground cumin
- 1.5 tsp cayenne pepper
- Leaves of several sprigs of fresh thyme
- 2 fresh bay leaves

Recipe preparation:
- In a bowl, mix paprika, coriander, cumin, cayenne pepper, thyme and bay leaf. Grind and set aside the mixture onions, peppers, celery and garlic.
- Heat a thick-bottomed pan over medium-high heat. Sprinkle chicken with salt and pepper and roll in flour.
