  1. Melt the butter (olive) oil in a small skillet on low heat. French scramble
  2. Break the eggs into a glass bowl and beat them well with a fork. Pour the egg mixture. Add salt and pepper (I like spices for lettuce or Italian). Stir the mixture with a spatula from the edges to the center until the eggs are cooked to the desired consistency – it usually takes a couple of minutes. French scramble
