- 1 tbsp. l cayenne pepper
- 1 tbsp. l allspice

Recipe preparation:
- Lay each rib part on a very wide, dense sheet aluminum foil. (The foil should be 10 cm longer with each side than a piece of meat.) Sprinkle generously over each large piece salt and three tablespoons of the mixture. Turn the ribs over the meat down and tightly wrap in foil. Put on a small baking sheet and refrigerate overnight.
