Grilled lobster in basil oil

Recipe preparation:

  1. Combine butter, basil, salt and pepper to taste, mix everything until smooth. Transfer the mixture to medium saucepan, cover with cling film and refrigerate not less than 30 minutes.
  2. Divide the lobster in half lengthwise. Pass the knife through the tail, cutting only meat and leaving the shell whole. Spread the lobster like this so that the two halves are partially connected to each other. Separate claws and legs. Lightly crush them with a knife handle.
  3. Place claws and legs on the grill (mild to low temperature) cover with a baking dish. Cook for 5-7 minutes with each side. Oil the lobster carcasses with olive oil, season salt and pepper to taste. Put them on the grill (medium temperature) carapace up. Fry for 8-10 minutes.
  4. Remove the lobster from the grill and butter them with basil.
