Ingredients for the recipe:

  • 900 gr. chicken thighs, legs and breasts with skin and bones
  • Canola oil

Mix of spices “Jerk”:

  • 3 tbsp. l ground coriander
  • 3 tbsp. l ground ginger
  • 3 tbsp. l brown sugar
  • 2 tbsp. l onion powder
  • 2 tbsp. l garlic powder
  • 2 tbsp. l coarse salt
  • 2 tbsp. l habanero pepper powder
  • 1 tbsp. l dried thyme
  • 2 tsp whole black pepper
  • 2 tsp ground cinnamon
  • 2 tsp ground allspice
  • 2 tsp ground cloves

Glaze with habanero pepper and mint:

  • 1.5 tbsp. red wine vinegar
  • 1.5 tbsp. white wine vinegar
  • 3 tbsp. Sahara
  • 1 chopped habanero chilli
  • 1/2 tbsp. coarsely chopped mint leaves
  • Salt

Recipe preparation:

  1. Jerk Spice Mix: Mix all the ingredients in a bowl medium size Glaze with habanero pepper and mint: B pour a medium-sized stainless steel pan pour wine vinegar and put sugar.
