Grilled beef kufta with salad melons

Ingredients for the recipe:

  • 0.5 tbsp. diced whole grain dough
  • 1/4 Art. walnuts
  • 2 medium red onions; 1 grated, 1 cut in half and thinly sliced
  • 1.5 tsp paprika
  • 0.5 tsp ground cinnamon
  • 1.5 tsp dried mint
  • 0.5 tsp ground zira
  • 1/4 tsp cayenne pepper
  • 2 tbsp. l chopped dill
  • 0.5 tbsp. fresh parsley
  • 0.7 kg minced beef neck
  • Half cut ripe cantaloupe melon, sliced straws
  • 1 tbsp. l lemon juice
  • Olive oil to grease cutlets

Recipe preparation:

  1. Soak the bread in water for 10 minutes; then squeeze and grind in food processor with walnuts, grated onions, 1 hour l paprika, cinnamon, mint, zira, cayenne pepper, 1.5 tsp. salt and 0.5 tsp black pepper. Add 1 tbsp. l dill and parsley. Beat until smooth.

  3. In a bowl, mix melon, lemon juice, 1 tsp. salt, onion slices and the remaining 1 tbsp. l dill and 0.5 tsp paprika.
  4. Preheat the grill to moderate heat. Grease cutlets olive oil. Cook for about 5 minutes; flip and keep frying until cooked, but the cutlets should still be wet, another 4 minutes. Serve with melon salad.
