Ingredients for the recipe:

  • 1 small grilled chicken, chop meat (about 4 tbsp.)
  • 450 gr raw hot italian sausages for frying
  • 3/4 Art. wheat flour
  • 1 large onion, diced
  • 1 medium green bell pepper, diced
  • 1 small fennel, only the white part, cut into cubes
  • 1 tbsp. l paprika
  • 1.5 tsp dried oregano
  • 1.5 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tbsp. l Worcestershire sauce
  • 4 large cloves of garlic, chop
  • 6 – 8 tbsp. chicken broth
  • 2 bay leaves
  • 1 bunch chopped green onions
  • Vegetable oil

Recipe preparation:

  1. Heat 1 tbsp. l cooking oil in a big, heavy pan over medium heat. Add sausages and fry until until they acquire a beautiful shade, about 7 minutes. Lay out pans on a cutting board; leave fat. When sausages cool, cut them into pieces.
  2. Add extra oil to the sausage fat, to get 1/2 tbsp. Add flour to fat and cook on medium fire, slowly and constantly stirring and scraping pieces from the bottom pots until the mixture thickens and becomes chocolate-colored, from 25 to 30 minutes Add onions, peppers and fennel and fry until softness, about 10 minutes
  3. In a small bowl, combine paprika, oregano, thyme, garlic powder, onion powder, salt, black and cayenne pepper. Add Worcestershire sauce.
  4. Add the garlic to softened vegetables; fry until aroma, 1 min. Add the spice mixture and mix until homogeneity. Stirring continuously, add 6 tbsp. chicken broth and bring to a boil. Add bay leaf. Reduce heat to medium and simmer until thickened, 30 to 40 minutes.
  5. Put the chopped sausage into the pan. Add chopped chicken and all other ingredients except green onions. Cook another 30-40 minutes, until gumbo thickens even more, adding more broth if necessary. Serve gumbo in bowls and decorate green onions.
