- 1 medium green bell pepper, diced
- 1 small fennel, only the white part, cut into cubes
- 1 tbsp. l paprika
- 1.5 tsp dried oregano
- 1.5 tsp dried thyme
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 tbsp. l Worcestershire sauce
- 4 large cloves of garlic, chop
- 6 – 8 tbsp. chicken broth
- 2 bay leaves
- 1 bunch chopped green onions
- Vegetable oil

Recipe preparation:
- Heat 1 tbsp. l cooking oil in a big, heavy pan over medium heat. Add sausages and fry until until they acquire a beautiful shade, about 7 minutes. Lay out pans on a cutting board; leave fat. When sausages cool, cut them into pieces.
- Add extra oil to the sausage fat, to get 1/2 tbsp. Add flour to fat and cook on medium fire, slowly and constantly stirring and scraping pieces from the bottom pots until the mixture thickens and becomes chocolate-colored, from 25 to 30 minutes Add onions, peppers and fennel and fry until softness, about 10 minutes
- In a small bowl, combine paprika, oregano, thyme, garlic powder, onion powder, salt, black and cayenne pepper. Add Worcestershire sauce.
- Add the garlic to softened vegetables; fry until aroma, 1 min. Add the spice mixture and mix until homogeneity. Stirring continuously, add 6 tbsp. chicken broth and bring to a boil. Add bay leaf. Reduce heat to medium and simmer until thickened, 30 to 40 minutes.
- Put the chopped sausage into the pan. Add chopped chicken and all other ingredients except green onions. Cook another 30-40 minutes, until gumbo thickens even more, adding more broth if necessary. Serve gumbo in bowls and decorate green onions.
