Difficulty: medium Servings: 4 In the recipes volumetric containers are used in volume: 1 cup (tbsp.) – 240 ml. 3/4 cups (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (Art.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp) – 15 ml. 1 teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 2 – 3 liters vegetable oil
- 4 (approximately 500 gr.) Whole peeled squids
- 1 tbsp. milk
- 6 small artichokes
- 1 medium zucchini
- 1.5 tbsp. wheat flour
- Salt and Freshly Ground Peppers
- 2 lemons (1 sliced very thin; another cut in pieces)
- 3 cloves of garlic, cut into thin slices
- 1 large handful of fresh parsley leaves
- 1 small handful of fresh rosemary leaves

Recipe preparation:
- Prepare deep fat: fill a large pot vegetable oil and slowly heat at medium temperature. While preparing the ingredients for deep fat.
- Prepare squid and vegetables: cut the tentacles off body. If the squid is large, cut the tentacles in half. Slice body squid in long stripes. Submerge squid in milk, on while the rest of the ingredients are being prepared.
- Cut the stem from the artichokes and remove the outer leaves. Slice leaves in stripes. Cut ends at zucchini and cut long straws.
- Prepare the breading mixture: mix in a large dish flour, 2 tsp. salt and 1 tsp. pepper. Put in a separate dish paper towels.
- Increase the temperature of the deep fat and heat the oil to 190 C. Throw the squid on a sieve and transfer to a dish with flour, add artichokes and zucchini, mix.
- Once the oil is hot, add one third of the deep fat mixed with flour ingredients, as well as several slices lemon and garlic, fry for 1 min. Then add one third greens and continue cooking until vegetables and squids become golden color, another 1 – 2 minutes. Using a slotted spoon to shift fried ingredients on a prepared dish and let the oil drain. Continue cooking the remaining ingredients.
- Put fried vegetables, squid and greens on a serving dish and sprinkle on top with plenty of salt and minced parsley. Serve the fritto mysto hot with lemon wedges.
