  1. Wash the eggplants and cut them into long slices, a wide part can be cut into circles. We put the oven at 230 degrees.

  2. Spread prepared slices on 2 baking sheets, sprinkle salt, sprinkle with oil and put in the oven for 5-7 minutes, until will become soft. Cooling down.

  3. We spread the grated carrots in oil (1 tablespoon), fry for 8-10 minutes until soft, add tomato paste, mayonnaise, finely chopped green onions (leave a little), ground pepper, salt and fry for another 1 minute, stirring. Cooling down.

  4. In the cooled carrot filling, add crushed through a press garlic, mix and try on the salt.

  5. On one side baked eggplant slices spicy vegetable filling and roll into rolls.

  6. Fragrant rolls with carrots sent to a flat plate, sprinkle with the remnants of green onions and immediately serve. Sliced eggplant can not only be baked in the oven, but also fried on in a frying pan or on an electric grill.
