  1. We wash the duck carcass, soak it with paper towels outside and inside. In a bowl, mix the oil, thyme, rosemary, sage, ground pepper, salt and rub the duck inside and out. We send the prepared duck to a deep pan with a wire rack.

  2. We put in the oven at 180 degrees for 1 hour 30 minutes. Vegetables rinse, peel and chop coarsely. We take out the duck, drain the fat from baking sheet, spread the vegetables, salt, pepper, pour a little fat and mix. Place the duck on the grill again on top of the vegetables and bake another 1 hour. After 30 minutes, mix the vegetables.

  3. We take out the fragrant delicious duck, put it on the dish, add a few baked vegetables next to it (put the leftovers in another plate) and immediately serve.
