  1. My duck’s carcass, soaked in paper towels, rubbed salt, ground pepper and cool for at least 2 hours.

  2. Peel tangerines, divide in half, peel apples from seeds and peels, cut into slices. Fill with prepared fruits cavity of the duck. We set the oven to 250 degrees.

  3. We send the duck into shape, fasten the legs with twine or leather, add the remaining fruits around, cover with foil and put in oven for 2 hours.

  4. After 2 hours, remove the foil and grease the prepared duck honey mixture (honey, orange juice and 1 tablespoon of fat from the bottom), reduce the temperature to 200 degrees and bake another 30 minutes, until will not become brown.

  5. We listen to a delicious duck, transfer to a dish and serve immediately on the holiday table.
