  1. We heat the oven to 150 degrees in convection mode.
  2. Peel the onion and cut into feathers, put in water with ice on half an hour.
  3. We chop almonds.
  4. Cut the apricots into halves, remove the seeds. Pulp cut apricots into slices. Sprinkle with vinegar, salt and pepper.
  5. In a small bowl, mix ground cardamom, vinegar and honey.
  6. The skin on duck breasts is slightly incised. Salt, pepper. Fry skin down in a grill pan for about 5 minutes. Turn over, grease with honey dressing and send to the oven for 5 minutes. We take out, cover with foil and cool.
  7. For dressing, mix duck juice, orange juice and hoisin. Dilute a little with olive oil.
  8. Throw the onion in a colander, dry and put it in the dressing. Mix onion with dressing and slices of apricots.
  9. Cut the duck breast into thin slices. Spread on a plate of spinach, onions with apricots and a duck on top. Spatter dressing, salt and pepper and decorate with almonds.
