- We clean and gut the fish.
- Three ginger on the shallow side of the grater. Grind in a mortar chopped mint leaves with ginger, olive oil and salt.
- Thoroughly coat the fish inside and out, leave a little marinade. Inside each fish we put a slice of lemon and a twig peppermint.
- Cut cherry tomatoes in half.
- We cover the baking sheet with parchment, put the fish on top we spread the cherry, capers and pour the remaining marinade.
