  1. We clean and gut the fish.
  2. Three ginger on the shallow side of the grater. Grind in a mortar chopped mint leaves with ginger, olive oil and salt.
  3. Thoroughly coat the fish inside and out, leave a little marinade. Inside each fish we put a slice of lemon and a twig peppermint.
  4. Cut cherry tomatoes in half.
  5. We cover the baking sheet with parchment, put the fish on top we spread the cherry, capers and pour the remaining marinade.
  6. Preheat the oven to 190 degrees and bake the fish for 20 minutes. Enjoy your meal!
