Croutons with Parmesan, Pancetta and Eggs

  • 3 tbsp. l olive oil
  • 110 gr. sliced by thin sliced pancetta (8 – 12 slices)
  • 6 tbsp. arugula
  • 1 – 2 tbsp. l seasoned balsamic vinegar or balsamic glaze

Recipe preparation:

  1. Place the baking sheet in the oven and heat to 120 ° C. In the dish for baking, beat 4 eggs with milk, 1/4 tbsp. cheese, parsley, 1/2 tsp salt and a little ground pepper.
  2. Heat over medium heat 1 tbsp. l olive oil in large non-stick pan. Add pancetta and fry, turning, until crisp (4-5 minutes). Lay out the slices bacon on paper towels to absorb excess fat, and left in the pan until set aside.
  3. Heat in another large non-stick pan. over medium heat 1 tbsp. l olive oil. Put the bread in the egg mix and let it soak by flipping once (approximately 1 minute). Put 4 slices of bread in a pan and sprinkle each of them 1 tbsp. l cheese. Fry until golden brown below (about 2 minutes).
  4. Turn over, sprinkle each piece of bread 1 tbsp. l cheese. Cook until browning and crispy bottom (approximately 2 minutes). Turn over again and fry until the cheese will not melt (about another 1 minute). Move to baking sheet so that the croutons are warm, and repeat the same with the remaining bread and cheese.
  5. Heat the pan with fat over medium heat after frying the bacon. Drive the remaining 4 eggs into it and cook until the squirrels catch (approximately 3 minutes). Spread the croutons on plates and lay out fried eggs on top. Mix in a bowl arugula with the remaining 1 tbsp. l olive oil and a pinch of salt and pepper. Add to croutons on plates. Sprinkle with balsamic vinegar and season pepper.
