Recipe preparation:
- In a large thick-walled pan, heat a layer of oil high 5-8 cm. Up to 170 degrees.
- Wash the cabbage thoroughly and remove the stems. Tear the leaves on large pieces and dry them either in a salad dryer or on paper towels.
- Throw 5-7 leaves at a time into hot oil and fry, until the cabbage becomes crispy and almost transparent (60–90 seconds). Place on a wire rack above paper towels to stack fat. Salt while the leaves are still hot.
- Sauté the cilantro leaves for a few seconds and lay out for draining fat onto the same grill. Salt a little more than kale. Serve as a snack or side dish.
