Creamy mashed pumpkin soup with cream and apple and cranberry dressing

Ingredients for the recipe:

  • 1 tbsp. l top quality olive oil, and more for frying
  • 2 tbsp. l (30 gr.) Butter
  • 1 fresh bay leaf
  • 2 stalks of celery with herbs, finely chopped (you can save time by buying washed, peeled celery, which it remains only to chop)
  • 1 medium onion, thinly sliced
  • Salt and ground black pepper
  • 3 tbsp. l flour
  • 2 tsp seasoning to the bird or 2 tsp. ground thyme
  • 2 tsp hot sauce, or to taste
  • 6 tbsp. chicken broth
  • 1 can (800 grams) of finished pumpkin puree
  • 2 tbsp. fat cream
  • 1/2 tsp freshly ground nutmeg

Refueling:

  • 1 crunchy apple, Mac or Granny Smith, finely chopped
  • 1/4 red onion, finely chopped
  • 2 tbsp. l lemon juice
  • 1/2 tbsp. dried sweetened cranberries, chopped
  • 1 tsp chili powder
  • 2 tsp honey
  • 1/2 tsp ground cinnamon

Recipe preparation:

  1. Heat a medium saucepan over a little more than medium heat. Add oil, celery, onions. Season the vegetables with salt and pepper. Sauté for 6-7 minutes until vegetables are soft. Add the flour seasoning for poultry and hot sauce, cook for about a minute. Pour in chicken stock, warm until boiling. Add pumpkin over a spoon mashed potatoes. Simmer for ten minutes, until soup thickens, add cream and nutmeg. Turn down the fire but not turn off so that the soup does not cool before serving.
  2. While the soup is cooking, prepare a dressing: mix apple, onion, lemon juice, cranberries, chili powder, honey and cinnamon.
  3. Season the soup and dressing, serve in small plates with a couple tablespoons of dressing.
