In this classic recipe, wings are pickled in spicy sauce, then crumble in flour with spices and deep-fried. Additional flour breading gives an even golden color and a wonderful crisp reminiscent of fried chicken in South American style. For the recipe you also need to cook blue cheese dip sauce: it’s pretty simple and makes it possible experiment. Try using gorgonzola or any other blue cheese to taste (Roquefort, Matteg or Stilton) – the result will surprise you!

- 30 chicken wings, small joint remove
- 2 tbsp. hot sauce
- 1/4 tsp worcestershire sauce
- 1.5 tbsp. flour
- Cayenne pepper
- 2 large eggs
- 1/4 Art. whole milk
- Deep-frying vegetable oil
- Celery sticks for serving
Blue cheese dip
- 1 tbsp. sour cream
- 1/2 tbsp. mayonnaise
- 1 lemon squeeze juice
- 1 tbsp. l white vinegar
- 1/4 Art. chopped parsley leaves
- 1 tsp chopped shallots
- 1/2 tsp chopped garlic
- 110 gr. blue cheese crumble

Recipe preparation:
- Pour the deep-frying oil into a large pan with a layer of 5 cm. And Heat over medium heat to 190 ° C.
- Prepare the wings. Put the wings in a glass or another non-reactive bowl, add Worcestershire sauce and 1 tbsp. hot sauce. Mix thoroughly so that all wings are covered sauce, cover and refrigerate for at least 30 minutes.
- Pour flour into a separate bowl, season with salt and cayenne pepper to taste. In another bowl, batter, mix well whisk eggs with milk. Roll each wing first in flour mixture, then dip in batter, and finally completely immerse into the flour mixture, coating evenly.
- Deep-fry for 12-15 minutes, or until batter acquires homogeneous crispy texture. Shift the finished wings, to dry, on paper towels or a paper bag for products (on the side without pictures).
- Cook the dip sauce. In a bowl, mix with a whisk until homogeneity sour cream, mayonnaise, lemon juice, vinegar, parsley, shallots and garlic. Gently stir in crumbled cheese. For serve, place the fried wings in a large bowl and fill the remaining 1 tbsp. hot sauce. Serve with cheese dip sauce and with celery sticks.
