  1. Make cross-shaped incisions on chestnuts, put all the fruits on a baking sheet, bake at 180 degrees for half an hour.
  2. Finely chop the garlic and onion.
  3. Fry the peeled chestnuts for 8-10 minutes in a pan.
  4. Add bay leaf, onion, garlic, salt, pepper. Keep going roast for 3 minutes. Pour in the sherry and add half of everything thyme.
  5. Fry the mixture for 4-5 minutes, until the whole evaporates alcohol.
  6. Rub the turkey carcass (washed) with pepper and salt. Mix coriander with thyme and grate the turkey between the skin and meat. Fill the carcass with filling, fasten it with toothpicks.
  7. We will bake the turkey at a temperature of 220 degrees, cook in for an hour and a half.
