Steamed Chinese Buns:
- 6 Chinese Bao Buns
- 1/2 carrot, chopped
- 1/4 red onion, finely chopped
- 1/4 medium daikon radish, chopped
- 1/2 tbsp. rice vinegar
- 1/4 Art. fish sauce
- 2 tbsp. l plus 2 tsp spicy chilli paste “sambal oelek”
- 1 tbsp. l Sahara
- 1 tsp finely chopped ginger
- 2 garlic cloves, peeled and finely chopped
- 1/2 tbsp. Hoisin sauce
- 1/4 Art. maple syrup
- 6 small slices of bacon
- 8 shiitake mushrooms, chopped
- 2 tbsp. l soy sauce
- 1 head of Beijing cabbage
- 1/2 cucumber, thinly sliced
- 1/2 tbsp. bean seedlings mung (mash)
- 1/2 tbsp. roasted peanuts, coarsely chopped
- Cilantro leaves for serving

Recipe preparation:
- In a large bowl, combine carrots, onions and daikon. In a little jar or container with lid combine rice vinegar, fish sauce, 2 tsp. sambal olek, sugar, ginger and half garlic. Shake well and leave until sugar dissolves, and the aromas do not mix for at least 15 minutes. Add mix the vegetables into the marinade and shake. Marinate at room temperature for 1 hour
- In a small bowl, combine Hoisin sauce, maple syrup and the remaining 2 tbsp. l spoons sambal oelek. Lubricate both with this sauce. sides of the bacon and lay it on a baking sheet. Bake bacon in for 5 minutes, then brush with sauce on both parties. Keep cooking until the bacon is sticky and cracked, about 25 min.
- Meanwhile, heat the canola oil in a pan. Add the remaining garlic and fry until aromatic. Add mushrooms and keep frying. Then add soy sauce, mix and remove from heat.

- When serving, lay in a bun pickled vegetables, fresh cucumber, caramelized bacon, mushrooms fried with garlic, sprouted mung beans, peanuts and cilantro.
