Ingredients for the recipe:

  • 1 can (800 gr.) Fried tomatoes, diced
  • 2 cans (425 gr. Each) black beans, do not drain the liquid
  • 1 small nutmeg pumpkin (about 450 gr.), Peel and cut into slices of 1.3 cm. (about 3.5 tbsp.)
  • 1 small rutabaga (about 450 gr.), Peel and chop pieces of 1.3 cm. (about 3.5 tbsp.)
  • 3 tbsp. l olive oil
  • 1 large chopped onion
  • 2 chopped bell peppers (1 red, 1 yellow)
  • Salt
  • 3 minced cloves of garlic
  • 1 tbsp. l chili powder ancho
  • 1 tbsp. l chili powder
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp dried oregano
  • 2 tbsp. l tomato paste
  • 2 bay leaves
  • Pumpkin seeds, chopped green onions and grated cheddar for sprinkles
  • Corn bread for serving

Recipe preparation:

  1. Heat the olive oil in a large cauldron or pan on moderate heat. Add onions and bell peppers, salt and cook by stirring occasionally until the vegetables are softer and lightly browned – about 10 minutes. Pull out bay leaves, salt. Serve with corn bread, sprinkled with the indicated ingredients.
