Chicken fingers with a side dish of snow pea

Even a snack like chicken fingers can be cooked so that they will be crispy, filled with exotic Asian flavors and at the same time useful. Chicken is cut into strips and instead traditional breading is covered with a mixture of fried sesame seeds, crushed popped rice from breakfast cereals and orange zest. And so that the crispy breading sticks well to the meat and becomes even tastier, pre-dip the chicken in a mixture of egg whites and teriyaki sauce. Chicken fingers

  • 0.7 kg skinless chicken breasts and boneless strips 10×4 cm., approximately 18 pcs.
  • 1 tbsp. l sesame seeds
  • 4 tbsp. (100 gr.) Crispy rice (breakfast cereals)
  • 0.5 tsp grated orange peel
  • Squirrels 2 eggs
  • 1 tbsp. l light salted teriyaki sauce

Salad

  • 2 tbsp. l rice vinegar
  • 1 tsp honey
  • 1 tbsp. l dark sesame oil
  • 220 gr snow peas in pods, chopped
  • 3 medium carrots, approximately 220 gr., Peeled and chopped thin straws

Sauce

  • 0.5 tbsp. Reduced Orange Jam Sahara
  • 1 tbsp. l light salted teriyaki sauce
  • 1 tsp grated ginger
  • 1 tbsp. l freshly squeezed lemon juice

Recipe preparation:

  1. Cook carrot salad: in a large bowl, mix the vinegar and honey, then stir in sesame oil. Add peas and carrots and mix well. Set aside so that all the flavors mix until cook chicken and sauce.
  2. Preheat the oven to 220 °. Place the wire rack on the pan and sprinkle lightly on the cooking spray.
  3. Sprinkle sesame seeds in a small skillet with non-stick coated and put on medium heat. Fry, stirring frequently, until golden brown and the appearance of aroma, about 5 minutes. Set aside to cool the sesame seeds.
  4. Pour the rice into a plastic bag and crush it with a rolling pin or a heavy can until large crumbs are obtained. In a shallow bowl mix fried sesame seeds, chopped rice and zest orange and lightly salt and pepper.
  5. In another shallow dish, beat egg whites with sauce teriyaki. Dip each chicken finger in the egg mixture and then roll in breading, pressing so that it sticks well. Place on a wire rack and sprinkle the chicken with a cooking spray. Bake until golden brown and the chicken is ready for 18-20 minutes.
  6. Meanwhile, in a small saucepan over medium heat, heat jam, teriyaki sauce and ginger until all the ingredients are well mixed up. Remove from heat and stir in lemon juice. Serve chicken with dipping sauce and salad.
