If you follow this recipe exactly, you can make delicious eclairs with a delicate cream. You can buy them, of course. ready, but if you cook at home, they will certainly be more useful.

  1. Pour 250 ml of plain water into a saucepan and bring to a boil. Add salt and butter.
  2. While the water and oil boil again, sift the flour into a bowl.
  3. As soon as the liquid boils, pour the flour into it and, without removing from fire, continuously stir until the dough gathers in a ball, ok lagging behind the walls of the dishes. Remove from heat.
  4. Beat the eggs with a fork in a separate bowl. Add a little bit eggs in slightly cooled dough, constantly stirring. The result is soft dough.
  5. We spread the dough in a pastry bag and we plant our future eclairs on a baking sheet.
  6. Bake in a preheated oven to 200 degrees for 30 minutes. Turn off the oven and leave for another 10 minutes.
  7. For cream mascarpone, cream and powdered sugar, beat with a mixer and put it in the refrigerator.
  8. Fill only fully cooled eclairs with cream with a pastry syringe or spoon, cutting an eclair in half along horizontally.
  9. Before serving, decorate with icing or just powder.
