Steamed beets are perfect for steak.
This amazing side dish is being prepared for the time which you would bake beets in the oven, which saves time for slicing. Additionally, beet tops were used in this recipe, but if you have beets without a top, then you can take 2 tbsp. greens, such as chard or kale kale.

Ingredients for the recipe:
- 900 gr. medium red beets with tops (total about 8 PC.)
- 2 tbsp. l olive oil
- 2 tbsp. l white wine vinegar
- 1 bay leaf
- 60 gr goat cheese

Recipe preparation:
- Trim the tops from the beets and chop them finely, you should get about 2 tbsp. greens. Set aside.
- Peel and cut the beets into pieces to make about 4 tbsp. Place the beets in a glass baking dish along with oil, vinegar, bay leaf, 1/3 tbsp. water, 1/2 tsp salt and 1/4 tsp black pepper. Shuffle. Cover with a hole or cling film with 6 small holes. Heat in high power microwave for 5 min. Open and mix.
- Cover again and microwave, stirring the beets every 5 min., until the beets are soft, you need about another 10 min. Carefully open and add greens and 1/4 tsp. salt. Cover again and place in microwave until soft greens for 5 minutes. Remove bay leaf. beets and greens in a serving bowl and crumble goat cheese from above. Sprinkle lightly with black pepper and serve immediately. beetroot salad with tops.
