Beef marinated with mashed potatoes

Ingredients for the recipe:

  • 3 cloves of garlic, finely chopped
  • 1 tbsp. l grilled meat seasonings
  • 1 tsp smoked paprika or ground cumin
  • 2 tsp hot sauce
  • 1 tbsp. l worcestershire sauce
  • 2 tbsp. l red wine vinegar
  • 1/3 Art. olive oil
  • 900 gr. beef flank
  • 1150 gr. young potatoes
  • 1 stalk of leek
  • 4 slices of chopped smoked bacon
  • 1 tbsp. chicken broth
  • 1 branch of cherry tomato, chopped
  • Salt and pepper
  • 1 tbsp. sour cream

Recipe preparation:

  1. Mix garlic, meat seasoning, smoked paprika, hot sauce, Worcestershire sauce and vinegar. Stir with olive oil. Place the meat in a shallow dish and grate with marinade, give stand for 15 minutes
  2. Cut large potatoes in half, leave small ones whole. Place the potatoes in a pan and fill with water. Bring to boil and cook for 12 to 15 minutes. until ready.
  3. Heat a grill pan or grill over high heat.
  4. Cut the leek in half along. Cut a little thick more than a centimeter. Place the leek in a large bowl of water and wash thoroughly, separating all layers. Tilt the leek onto colander.
  5. Grill meat for 6 to 7 minutes. from each side.
  6. Pour olive oil into a hot pan, place on moderately high fire. Cook the bacon for 3 to 5 minutes until it is starts to fry, and most of the fat does not melt. Add leek in a pan and fry 3 – 5 min. until it becomes soft.
  7. Drain potato water and crush with chicken stock. Add the bacon, leek and tomatoes to the puree and crush again. Season with salt and pepper to taste.
  8. Remove the meat from the grill, let it lie down a bit to juice evenly distributed inside. Then cut into thin slices across the fibers. Serve beef with mashed potatoes with bacon and tomatoes, garnish the dish with a spoon of sour cream.
