There is nothing better than a good-quality Guinness beef pie, to keep warm when it’s cold outside. Served with green peas.

Ingredients for the recipe:

  • 1 kg. beef brisket, cut into 2 cm cubes.
  • 440 ml. beer guinness
  • 3 heads of red onion
  • 3 cloves of garlic
  • 2 carrots
  • 2 stalks of celery
  • 4 forest mushrooms
  • A few sprigs of rosemary
  • Olive oil
  • 2 tbsp. l with a hill of wheat flour
  • 150 gr. cheddar cheese
  • 170 gr puff pastry
  • 1 large egg

Recipe preparation:

  1. Preheat the oven to 190ºC. Peel and chop onion, garlic, carrots and celery, cut mushrooms into slices and chop finely rosemary. Heat the oil in a large non-stick pan, add the onions and simmer for 10 minutes. or until it softens, stirring occasionally.
  2. Increase heat, add garlic, carrots, celery and mushrooms, mix, then add beef, rosemary, a pinch of sea salt and 1 tsp. black pepper. Fry for 3 or 4 minutes., then add beer, stir in flour and add enough amount of water.
  3. Bring to a boil, cover the pan and place in oven for 2 hours 30 minutes or simmer until the meat is soft. The ideal filling for the pie should not be too thin, therefore, if it is still liquid, place the pan on the stove and simmer until the sauce thickens.
  4. Grate the cheese coarsely, mix half the cheese with the filling, then put it in a pie dish and let cool slightly. By time, pour flour onto a clean work surface and thinly roll out the puff pastry. Sprinkle the filling with the remaining cheese. Place the dough on the filling and fill the edges into the mold, make top pattern.
  5. Beat the egg, then apply it on top of the cake and bake in the oven for 45 minutes. or until the dough is cooked and will acquire a beautiful golden color. Serve pie with green peas.
