For turkey:
- 1 (6-7 kg.) Thawed turkey
- 3 tbsp. l vegetable oil
- Salt and Freshly Ground Peppers
- 10 fresh sage leaves
- 1 orange, cut in half
- 1 head garlic, cut off the base
- 2 medium sized red onions, peel and cut into four parts
- 3 medium-sized red apples, core and to cut in half
For the sauce:
- 6 tbsp. l (90 gr.) Butter
- 6 tbsp. l flour
- Chicken bouillon
- A few fresh sage leaves
- Apple juice
- Salt and Freshly Ground Peppers
- Ground Nutmeg

Recipe preparation:
- Prepare the turkey: remove the turkey from the refrigerator and let stand at room temperature, approximately 30 – 45 minutes. Remove the giblets and cut off the neck, leave for sauce. Rinse with water inside and out, wipe dry with paper towels. Spread the turkey with 2 tablespoons of vegetable oil, grate abundantly with salt and freshly ground pepper. Make small incisions on the turkey breast and place leaves under the skin sage, grate the juice with half an orange, the remaining half cut the orange into slices and place in the cavity of the turkey, and also add a head of garlic.
- Cook the turkey: preheat the oven to 250 C. Put the turkey in a large baking dish and place in bake until golden brown, about 20 – 30 minutes. Mix onions, apples, and 1 tablespoon in a bowl vegetable oil, add turkey neck, salt and Spice up.
