Ingredients for the recipe:

Turkey

  • 1 1/4 Art. coarse salt
  • 3/4 Art. brown sugar
  • 1/4 Art. coriander seeds, grind
  • 3 pcs. star anise
  • 1 tsp white pepper peas
  • 1 ginger root, finely chopped
  • 3 cloves of garlic, crush
  • 1 (5.5 kg.) Thawed turkey, cut along the back and expand like a book
  • 2 tsp ground coriander

Glaze

  • 3 tbsp. non-alcoholic apple cider (apple juice with pulp)
  • 1 ginger root, cut into thin slices
  • 1 tbsp. fresh or frozen cranberries
  • 1-3 dried red chili peppers
  • 1/2 tbsp. molasses
  • 1/2 tbsp. cider vinegar
  • Salt
  • 2-4 Art. l cold butter, cut into cubes

Recipe preparation:

  1. Make a pickle: pour 3 liters into a large pot water, add salt, brown sugar, coriander seeds, star anise, peppercorns, ginger and garlic, bring to a boil and a little cook to dissolve salt and sugar. Remove from plate and add 4 cups cold water, cool to room temperature.
  2. Place the turkey in a large container and pour brine (turkey must be completely covered with brine), cover and put in a cold place for 6-10 hours. Then take out the turkey from brine, dry and grate with ground coriander. Cover with foil and refrigerate for 4-8 hours.
  3. Prepare the icing: mix cider, ginger in a saucepan, cranberries, chili peppers, molasses and vinegar, bring to a boil and cook, stirring slowly until the liquid has settled, about 30 minutes. Strain the icing and salt.
  4. Preheat the oven to 190 C. Put a turkey on a baking sheet breast up and place in the oven, bake for 1 hour 10 minutes, or while the thermometer inserted in the hip shows 68-72 C. Continue baking, pouring icing every 10 minutes, until golden crust, about 30 minutes more. Take turkey out oven and leave for 15 minutes. Stir the remaining icing with butter.
