  1. We wash the skinless knuckle and soak it with paper towels. WITH In a bowl, mix rosemary (½ tsp), marjoram, thyme, ground pepper and salt (½ tsp).

  2. We rub the prepared knuckle with crushed one through a press garlic, a fragrant mixture of herbs, spread in a container and send to the refrigerator for at least 3 hours, preferably at night.

  3. After 3 hours, remove the pickled shank, place on a baking sheet in the middle and pour oil (2 tablespoons). Large peeled potatoes chop, sprinkle with salt, rosemary (½ tsp), ground pepper, pour the remaining oil, mix and spread around the shank.

  4. Put the baking tray with the shank and potatoes in the oven, preheated to 200 degrees, for 40-45 minutes, until meat from the bone will not separate well. We take it out after 20 minutes, turn the knuckle and potatoes.

  5. Put the delicious aromatic knuckle on a large plate, add crispy potatoes around and immediately serve with vegetable salads.
