Baked Pasta with Roasted Vegetables

Ingredients for the recipe:

  • 2 red peppers, peeled and chopped in strips 5 cm wide
  • 2 zucchini, cut lengthwise into 4 parts and diced size 2.5 cm
  • 2 zucchini, cut lengthwise into 4 parts and diced size 2.5 cm
  • 4 Cremini mushrooms, cut in half
  • 1 onion, peeled and cut into strips of length 2.5 cm.
  • 1/4 Art. olive oil
  • 1 tsp fine salt
  • 1 tsp ground black pepper
  • 1 tbsp. l dried italian herbs or provence herbs
  • 450 g pasta penne
  • 3 tbsp. marinara sauce (home or store)
  • 1 tbsp. grated fountain cheese
  • 0.5 tbsp. grated smoked mozzarella
  • 1.5 tbsp. frozen, but already slightly melted, peas
  • 1/4 Art. grated parmesan, plus 1/3 tbsp. for sprinkling
  • 2 tbsp. l (30 gr.) Butter, chopped into small pieces

Recipe preparation:

  1. Preheat the oven to 230 degrees. Put on a baking sheet pepper, zucchini, zucchini, mushrooms and onions, mix with olive oil, 0.5 tsp salt, 0.5 tsp pepper and dried herbs. Bake vegetables until soft for about 15 minutes.
