Baked Chicken in Sea Salt

  1. Wash the whole chicken carcass and carefully wipe it with paper with a towel. Rub rice wine or sherry outside and inside the carcass. Sprinkle with pepper. Let the wine soak and dry on the skin Chicken.
  2. Inside the carcass we place a rosemary branch. Rosemary grind with a knife and mix with sea salt.
  3. Lemons are thoroughly washed.
  4. Cover the baking sheet with two sheets of foil. Pour a layer of salt about 1.5 cm high. Rake the salt to the center and spray it 2 tablespoons of cool water.
  5. Put the chicken carcass on the salt and slightly bury it. The remaining salt along the edges is also slightly moistened with water. A good stick chicken salt on all sides. The bird carcass must be fully covered with salt “blanket”. We place the lemons next to the chicken on salt.
  6. Place the baking sheet in a hot oven for 60 minutes. The temperature regime is 220 degrees.
  7. Take the finished chicken out of the oven and leave for 15 minutes.
  8. With the heavy handle of a knife, we split the salt “bedspread” and get the chicken. Serve with baked lemons, divided into 4 parts.
