Ingredients for the recipe:
- 2 tbsp. pulp apple juice
- 1/4 Art. brown sugar
- 2 tbsp. l freshly squeezed lemon juice
- 1/8 tsp salt
- 3 peas of allspice
- 1 cinnamon stick broken in half
- 1 cm. Ginger root, peeled and chopped
- Special equipment: 6 (1/3 tbsp.) Molds for ice cream

Recipe preparation:
- In a medium-sized saucepan, mix apple juice, sugar, lemon juice, salt, ginger, cinnamon stick and allspice and on bring to moderate boil. Remove the pan from the stove and leave for 15 minutes. Then strain the mixture into a measuring cup.
- Pour the mixture into ice cream molds, insert the sticks, cover on top and freeze for 6 hours.
- Place the molds under a stream of cold water to release fruit ice, and serve immediately.
