Meatballs
- 340 gr minced beef
- 1 egg
- 2 tbsp. l tomato paste
- 3 tbsp. l finely chopped fresh cilantro leaves
- 1 tbsp. l chopped fresh ginger
- 1 tsp ground cumin
- A pinch of ground cinnamon
- 1/3 Art. ground oatmeal or small breading crackers
- Salt and ground black pepper
- 3 – 4 tbsp. l cooking oil for frying
- 4 tbsp. l chopped fresh parsley leaves
- Couscous with dried dates (see recipe below)
North African Sauce
- 1 can (400 gr.) Pulp of tomatoes or diced tomato
- 2 tbsp. l olive oil
- 1/2 diced small onions
- 2 cloves of garlic
- Zest of 1 lemon
- 1/2 tbsp. chopped pitted salty olives
- 1/2 tbsp. white wine
- 1/4 Art. chicken broth
- 1 tsp brown sugar
- 1/2 tsp dried red pepper flakes
- A pinch of ground cinnamon
- Salt and ground black pepper
Couscous with Dried Dates
- 1 tbsp. instant couscous
- 1 tbsp. water
- 1 tbsp. chicken broth
- 1 tbsp. l olive oil
- 1/4 Art. finely chopped dried dates
- Salt and ground black pepper

Recipe preparation:
- For making North African sauce: Large over a medium heat pan, heat the olive oil and fry the onion and garlic until soft, but do not brown, about 3 minutes. Add the lemon zest and olives and cook for another minute. Pour in white wine to degass the pot, and boil it for 1-2 minutes. Add broth, canned tomatoes, sugar, red cereal pepper and cinnamon. Simmer to blend for approximately 7 minutes. Salt and pepper to taste.
- For making meatballs: In a medium-sized bowl break the egg and put the tomato paste, mix until smooth condition. Add cilantro, ginger, cumin, cinnamon and good again mix. Add minced meat and oatmeal, salt and pepper to taste, gently mixing after each addition. Not knead too long. Hands roll 32 meatballs in diameter about 2.5 cm
- In a large frying pan, heat 3 tbsp over medium heat. l vegetable oil and bake meatballs in batches until they are will become golden on all sides. Add more if necessary oils. Transfer the meatballs to the saucepan and simmer for 20 minutes. Sprinkle with fresh parsley and serve with dried couscous dates. Couscous with dried dates: In a small saucepan on medium heat bring water, broth and oil to a boil. Add dates and then couscous. Cover the pan tightly, remove from fire and let stand for 5 minutes. Stir with a fork, salt and pepper to taste. Transfer to serving bowl and serve.
