Zucchini Nachos

  • 3 large eggs whipped
  • 2.5 tbsp. panko breadcrumbs
  • 450 gr zucchini (2 – 3 small fruits), sliced ​​into circles 0.5 cm thick
  • 130 gr grated mixture of mexican cheeses (monterey jack, cheddar, Asadero, Queso Quesadilla)
  • 1/4 Art. chopped jalapeno peppers
  • 0.5 tbsp. sour cream
  • 1 tbsp. pico de gallo sauce or salsa
  • 1 small diced avocado
  • 1 radish, thinly sliced
  • A small handful of leaves and soft stems of cilantro
  • 1 lime, cut into 4 parts

Recipe preparation:

  1. Install 2 oven grills on the lower and upper levels and preheat the oven to 220 ° C. Place the baking racks on baking sheets and generously sprinkle them with a culinary spray.
  2. In a large bag with ziplock mix flour and 3/4 tsp. salt. AT mix the eggs and 3/4 tsp in another same bag. salt. In third mix breadcrumbs and 3/4 tsp. salt.
  3. In the first package, put half of all the zucchini circles and well shake to roll them in flour. Take out the mugs and shake it off excess flour. Put them in a bag of eggs and just as well shake and massage with your hands so that the zucchini is covered with egg a mixture. Repeat the same with the remaining zucchini.
