  • 8 white anchovy fillets, drain the butter
  • 1/4 Art. olive oil
  • 2 cloves, minced garlic
  • 1 can (425 gr.) Canned white beans, liquid drain, rinse the beans
  • 0.5 tbsp. tahini pasta
  • 1/4 Art. chicken broth
  • 1 tsp coarse salt
  • 0.5 tsp red pepper flakes
  • 3 – 4 grinding black pepper
  • Juice and zest of 1 lemon
  • 1/4 Art. chopped chives

Recipe preparation:

  1. Preheat the oven to 200 ° C.
  2. Pita chips: in a small bowl mix zira, zaatar, chili seasoning and granulated garlic. Lubricate pitts on both sides. olive oil; cut each pita into 8 triangles. Blend them in a spice mixture to completely cover, then spread on a baking sheet. Roast until golden brown and crisp, 14 – 16 minutes. Cool on a plate covered paper towel.
  3. White bean and tahini puree: put anchovies on a small baking sheet and place in the oven for 6-8 minutes. In big frying pan over medium heat fry in olive oil garlic, white beans and baked anchovies. Cook, stirring frequently, within 4-6 minutes; transfer to a food processor and add tahini, chicken stock, salt, red pepper flakes, black pepper, juice and lemon zest. Grind until smooth.
  4. Transfer mashed white beans and tahini to a serving bowl and garnish with chives. Serve the dip sauce immediately with chips from pitas seasoned with a mixture of zaatar.
